Milk Sourcing & Testing

We source fresh milk from trusted local farms with A2 cows and buffaloes that are grass-fed and free from antibiotics. Each batch undergoes rigorous testing for purity, fat content, and quality before processing.

Curd Formation

The milk is gently boiled and then cooled to the perfect temperature for culturing. We add a small amount of previous day's curd as a natural starter culture, allowing it to ferment overnight.

This slow fermentation process develops the distinctive flavor profile and enhances the nutritional value of the final ghee.

Traditional Churning (Bilona Method)

Using the traditional wooden bilona (churner), we gently churn the curd to separate the butter. This manual process preserves the delicate milk proteins and ensures the ghee retains its authentic texture and aroma.

Unlike industrial methods, our slow churning doesn't generate heat that can damage nutrients, resulting in ghee with higher nutritional value.

Slow Heating & Clarification

The butter is slowly heated in large copper vessels at controlled temperatures. As it simmers, the water content evaporates and milk solids separate, leaving behind pure, golden clarified butter.

Our artisans carefully monitor the process, knowing exactly when to stop heating to achieve the perfect color, aroma, and texture.

Straining & Filtering

The clarified butter is carefully strained through multiple layers of muslin cloth to remove all milk solids. This step ensures our ghee has the clear, golden appearance and smooth texture it's known for.

We use traditional straining methods that have been perfected over generations to achieve the perfect clarity without compromising flavor.

Quality Testing & Certification

Every batch undergoes rigorous laboratory testing for purity, moisture content, and nutritional value. We test for parameters like FFA, peroxide value, and moisture to ensure consistency and quality.

Our ghee meets all FSSAI standards and holds additional certifications including Halal and for our organic range, USDA and EU organic certifications.
